I have to be careful these days in our dry 105+ temperatures so I have to carry 2 or 3 water bottles. A downtube bottle plus handlebar bottle is bare minimum, for sure. I usually stick with water and a banana and dates in the back pocket. I have learned too many times how valuable water down the back of the neck can save you on a long hot climb.
It's kind of like using a white gas stove for backpacking. You don't have as much luck with propane to light a wet camp fire!
